Orzo salad with basil vinaigrette

Orzo, a favourite type of pasta for many, is featured in this simple and delicious salad presented by La Recette Parfaite. What she likes most about this dish is the touch of flavour provided by our Basil Olive Oil, which she has enjoyed for many years. Fresh and tasty, this salad is a must try!

 

INGREDIENTS 

  • 128 g (1 ½ cups) orzo
  • 1 cup green olives, pitted and sliced
  • ½ cup sundried tomatoes, coarsely chopped
  • 1 yellow bell pepper, diced
  • 1 orange bell pepper, diced
  • 2 cups arugula
  • 1 can (540 ml) legume mixture, rinsed and drained
  • ½ cup of olive oil with basil Maison Orphée
  • 1 tbsp. lemon juice
  • Salt and pepper

 

PREPARATION

  1. Cook orzo according to instructions on the package.
  2. When it is cooked, rinse under very cold water and drain.
  3. In a bowl, mix the orzo with the remaining ingredients.
  4. Enjoy!
