Salmon tataki salad with hazelnut vinaigrette

Rain or shine, salad is always on the agenda when June rolls around.

To inspire your next summer creations, A & J Métissage offers you their fabulous salmon tataki salad with hazelnut vinaigrette. A pure DE-LI-CE!

 

INGREDIENTS 

For the salad
  • Mixed greens consisting of 1/2 romaine lettuce, 1/4 baby spinach and 1/4 napa cabbage
  • 250g beans, trimmed and halved
  • 6 radishes, julienned or thinly sliced
For the salmon tataki cubes
For the hazelnut vinaigrette

 

PREPARATION

  1. Mix all the ingredients for the salmon, except the garlic. Marinate for about 30 minutes in the fridge.

  2. Steam the beans (or blanch them in boiling water). Once cooked, run the beans under cold water to stop cooking. Set aside.

  3. Cut the lettuce, cabbage and spinach into strips and mix them in a bowl.

  4. In a large non-stick pan, heat oil over high heat until very hot. Add the garlic and cook for about a minute or until it begins to brown slightly. Add the salmon cubes and sear for about 2 minutes before turning them over. Cook for another minute for a ''rare'' result, or longer if desired. Remove the salmon from the pan to stop cooking.

  5. Arrange the salad mixture in four deep bowls, add the beans, radishes and salmon cubes. Pour in desired amount of dressing. Season lightly with salt and pepper to taste.

  6. Enjoy!
