Preparation time: 15 minutes

Cooking time: 45 minutes

Servings: 8 servings

This pumpkin bread from Dash of Honey tastes just like Fall! It's super soft and moist, thanks to the pumpkin puree and olive oil. Serve it with our homemade glaze for the perfect snack or dessert!

INGREDIENTS

  • 1 1/4 cup all-purpose white flour
  • 1/2 cup whole wheat flour (or swap with all-purpose flour)
  • 2 tsp. ground cinnamon
  • 1 1/2 tsp. pumpkin spice mix (or 1/2 tsp. nutmeg, 1/2 tsp. ground ginger, 1/4 tsp. cloves and 1/4 tsp. allspice)
  • 1 tsp. baking soda
  • 1/4 tsp. salt
  • 2 eggs, room temperature
  • 1 1/2 cup homemade or store-bought pumpkin puree (Note 1)
  • 1/2 cup of delicate extra virgin olive oil Maison Orphée
  • 1/3 cup brown sugar
  • 1/3 cup maple syrup
  • 1/4 cup milk (plant-based or cow milk)
  • 1 tsp. vanilla extract

Glaze

PREPARATION

  1. Preheat the oven to 350F and place the grill in the middle. Use a 9x5 bread pan and place on parchment paper.
  2. In a bowl, combine the dry ingredients: flour, cinnamon, pumpkin spice, baking soda and salt.
  3. In another big bowl, whisk the eggs with the pumpkin puree and olive oil. Add brown sugar, maple syrup, milk and vanilla extract. Mix until you get a homogenous texture.
  4. Combine the wet ingredients to the dry ingredients.
  5. Transfer the batter to the bread pan and spread evenly. Bake for about 45 to 60 minutes. Use a toothpick to check if your bread is cooked through.
  6. Let it rest for 5 minutes before removing the pumpkin bread from the pan. Let it cool down completely on a cooling rack or a plate.
  7. Prepare the glaze by combining all ingredients in a small bowl. Spread the glaze on top of the bread and garnish with nuts of choice. Place it in the fridge for 10 minutes so the glaze can set. Cut into slices and enjoy!

Notes

Store-bought pumpkin puree: You can easily find it at the grocery store.

Homemade pumpkin puree: Cut the pumpkin in half and discard the seeds. Place on a baking pan and bake at 400F for 45 to 60 minutes, until tender. Remove the flesh with a spoon and place in a food processor. Pulse until you get a creamy texture.
