Who said pickling vegetables was a complicated task? With this quick and easy recipe, you can keep your overly abundant harvest for weeks to come. Your pickled veggies will be perfect for your appetizers and meals!

INGREDIENTS

  • Vegetables, as desired
  • 1 cup of organic cider vinegar Maison Orphée
  • 1 cup of water
  • 2 tsp. salt
  • 2 tsp. sugar
  • Pepper
  • Aromatics, as desired (turmeric, coriander seed, fennel, bay leaf, rosemary or others)

 

 

PREPARATION

  1. In a saucepan, add water, cider vinegar, salt and sugar and bring to a boil.
  2. Wash and thinly slice the vegetables.
  3. Fill the jars with the vegetables, leaving 2-3 centimetres for the liquid.
  4. Add pepper and herbs.
  5. Stir in boiling liquid to completely cover vegetables.
  6. Close the jars and wait at least one day before tasting.
* The jars can be stored for a few weeks in the refrigerator.
